“What is this ‘cappings’?” you may ask.
Bees build honeycomb with beeswax, they then fill the cells of the comb with honey, and once they have reduced the moisture content to around 18% or less, they cover the cells with wax (cappings) in order to prevent atmospheric moisture from diluting the honey. When a beekeeper is extracting honey from the comb, the first thing he or she
usually
does is remove the cappings from the honeycombs to facilitate the extracting process, and these cappings contain a lot of pollen grains, so eating cappings along with honey exposes one’s immune system to even more pollen than just honey.
These cappings are saturated with honey which was recently extracted.
This product is full of pollen (beebread), propolis and beeswax.
We ship our product  in the 3 lb sealed food bags. You can cut the bag and transfer cappings into a jar or other container. The color of the cappings may vary depending on the honey source the bees visited.  Bees secrete white wax which they form into honeycomb which is white. They fill with honey and cap it.  If the beekeeper removes it very soon, the cappings will be very white. Some people buy fresh cappings which are very white and tender.  Tasty but of little medicinal value.  The longer the honeycombs stay in the hive, the darker they get until the cappings will be very dark after a few months.  This is because the bees are constantly bringing propolis into the hive to seal the cracks and spread around the hive to destroy bacteria harmful to the bees. In the wild, inside hollow trees, the bees coat the walls inside the hollow tree with the propolis which stops the wood from rotting. The bees bring the propolis into the hive in their pollen baskets on their legs and it is deposited on the white cappings as they travel over the honeycomb.  Therefore the caps become dark from the propolis. This is why we sell so much because the main benefit of the dark cappings is that you get that propolis, pollen and minerals when you chew the dark cappings.

We are migratory beekeepers with a honeyhouse and a home in Florida and the same in North Dakota. We are registered beekeepers in both North Dakota and Florida.  We move our bees on tractor & semi-
trailer trucks back and forth between Florida and North Dakota depending on the season. We transfer barrels of Florida honey to North Dakota when we go to our operation in North Dakota so we can continue our Ebay sales the year around. We transfer our clover, buckwheat, canola and other ND honeys we produce in North Dakota to Florida when we are there and then do the shipping from our honeyhouse in West Palm Beach, FL   .
So the shipping zip code reflects where we are in that time period, not where the honey was produced.
Customer ask about expiration date of cappings:
Honey and also these cappings saturated with honey have no expiration date. Honey is the only food that never spoils. One more thing I wanted to tell you. Maybe you thought the cappings were old because the wax is dark. The longer the honeycombs stay in the hive before being uncapped in our extracting room, the darker the cappings become from the propolis that the bees are bringing into the hive to deposit on the walls of the hive to prevent rot from moisture and to kill harmful bacteria. It is important that the cappings have this residue of propolis for health purposes and that is the primary reason we sell so many all over the country. Newly made honeycombs with all white wax would be worthless for their antibacterial properties and other health benefits. I do not know where you would ever find such a healthy food product at so low a price. Thank you.

I
woke up with you on my mind Sir. My husband said that your package was
delivered to my door on Saturday morning before noon. I did not know
about the delivery until Sunday because I was at the hospital when it
was delivered having a liver profile done. My husband was at work when I
returned home and he said that he simply forgot to tell me due to him
being tired when he got off night before last. He remembered yesterday
afternoon as he had placed my precious package in the cabinet. When he
presented me with the package, the look on my face was as priceless as
when my husband asked for my hand in marriage. I was so excited that I
could barely contain myself. I cut your name and address off of the
package and taped it to the lid of my newly sanitized Blue Ball Quart
sized jar. I then clipped the side of the honeycomb cappings bag and
poured it into the glass ball jar and used a credit card as a straight
edge to get all of the yummy goodness left in the bag. The bag filled
the jar up to the brim leaving only about a fourth of an inch from the
top. The smell is divine and reminiscent of wild flowers and oranges. I
was pleasantly surprised. I knew that the flavor would be intense, like
none other that I’ve ever had because of the color of the cappings and
honey. I took a teaspoon and scooped up a heaping spoonful and placed it
in my mouth and was instantly mesmerized by the unique taste.
Woooooooowwwwwww! It was super sweet and tasted just like the smell.
Even though I will be using this for medicinal purposes, I could chew
about a cupful in one sitting. My gastroenterologist says to chew a
teaspoon and swallow four times a day. I am praying that I get some
relief and hopefully this will help with some of my digestion issues as
my doctor says that he has several patients who ingest honey on a
regular basis for medicinal purposes only. I wanted to thank you from

Customer ask about whether to swallow the wax left after chewing.
There
are no set rules and the wax left after chewing the cappings can be
spit or else swallowed to get the fiber and health benefits left in the
wax. Humans have been eating honeycomb for thousands of years. In the

Customer ask if the cappings should be stored in the refrigerator and about the color variation.
Hello, Honeycomb cappings contain a high % of honey which is hygroscopic and will absorb water from the atmosphere which could cause the honey to ferment. Therefore, any honey should be kept in a sealed container to prevent it from getting thin thus raising the moisture content above 18%. Yeasts cells cannot survive in honey below 18% moisture content. Honey is the only food that never spoils because bacteria cannot survive in pure honey therefore refrigeration of pure honey is not necessary. The cappings vary in color depending on the honey source since the honeybees have wax glands which produce the beeswax from the honey they are consuming. The longer the honey was in the hive, the more propolis was deposited by the bees on the surface of the cappings so the darker they become. Cappings contain more pollen, propolis, trace minerals etc. than honey so they are renowned for they health benefit. Thanks for your question.
